Ingredients

  1. 4 quarts hot water

  2. 1/2 cup miso

  3. 1/2 cup sugar

  4. 1/2 cup gin remnants (pickling spices work fine)

  5. 1/4 cup lemon juice

  6. 1 tbs salt

Preparation

Combine all ingredients and whisk together - when cooled, place poultry in brine for 24 hrs.
